Suya Ram Meat (Tsire) – Northern Nigerian Grilled Yaji Spiced Ram

A beloved street food staple of Northern Nigeria, this Suya Ram Meat features tender, thinly sliced ram meat generously coated in the iconic yaji spice blend — a fragrant mix of groundnut powder, ginger, paprika, and garlic — then grilled over an open flame for a smoky, deeply flavourful result. Traditionally prepared during Eid-el-Kabir celebrations across Kano, Kaduna, and Sokoto, this dish carries both cultural pride and impressive nutritional value. Rich in lean protein and anti-inflammatory spices, this clinical nutrition version reduces excess sodium and uses heart-friendly preparation methods without compromising the authentic Hausa taste.

How to Make It

  1. 1

Prepare the Yaji Spice Blend (Tsire Mix)

In a dry bowl, combine the finely ground roasted groundnut powder, ground ginger, smoked paprika, cayenne pepper, garlic powder, onion powder, ground cloves, cinnamon, ground crayfish (if using), and the low-sodium seasoning powder. Mix thoroughly until a uniform, aromatic dry spice blend forms. This is your authentic yaji — the soul of every great suya.

Tip: Toast the ground spices in a dry pan for 30 seconds before mixing to awaken their oils and intensify the flavour — a method used by expert mai suya in Kano.
  2. 2

    Marinate the Ram Meat

Place the thinly sliced ram meat strips into a large clean bowl. Drizzle with 1 tablespoon of groundnut oil and the lemon juice. Coat the meat generously with half of the prepared yaji spice blend, pressing it firmly into both sides of each strip to ensure deep flavour penetration. Cover and marinate in the refrigerator for a minimum of 1 hour, or overnight for best results.

Tip: Slicing the meat thinly and against the grain ensures tenderness and faster, more even cooking on the grill.
  3. 3

    Thread onto Skewers

Remove the marinated ram meat from the refrigerator and allow to come to room temperature for 10 minutes. Thread the strips lengthwise onto skewers, weaving them through 2–3 times to keep the meat flat and even. Leave a small handle length at the base for easy turning.

Tip: Doubling up two skewers side by side prevents the meat from spinning when you flip — a practical trick used by roadside mai suya across the North.
  4. 4

    Grill the Suya

Heat a charcoal grill, gas grill, or heavy cast iron grill pan over medium-high heat. Lightly oil the grate or pan. Place the skewered ram meat on the grill and cook for 4–5 minutes on the first side without moving. Flip and grill for another 3–4 minutes. During the last 2 minutes of cooking, brush with the remaining 1 tablespoon of groundnut oil mixed with a pinch of the remaining yaji to form a flavourful crust.

Tip: Avoid pressing down on the meat during grilling — this releases juices and can dry out the suya. The ideal internal temperature for ram meat is 72°C (160°F).
  5. 5

    Rest, Coat and Serve

Remove the suya from the grill and allow to rest for 3–4 minutes. While still hot, dust lightly with the remaining yaji spice blend to reinforce the authentic suya flavour. Serve immediately on a wooden board or wrapped in foil alongside fresh sliced tomatoes and raw onion rings.

Tip: For clinical nutrition purposes, pair with a side of roasted sweet potato or a fresh vegetable salad with cucumber, cabbage, and garden egg to create a balanced, nutrient-dense Eid plate.
