How to Make It
- 1
Preheat a cast iron grill pan or tabletop grill over high heat until very hot.
- 2
Place pork belly slices directly on the grill with no marinade. Sprinkle lightly with salt.
- 3
Grill pork belly for 3–4 minutes per side, until well charred on edges and cooked through. Use scissors to cut into bite-sized pieces on the grill.
- 4
Grill garlic slices alongside the pork for 2 minutes until golden and slightly charred.
- 5
Prepare the ssam (wrap): lay a lettuce leaf flat, add a piece of grilled pork, a slice of grilled garlic, a little ssamjang, and spring onion salad.
- 6
Wrap and eat in one bite. Serve with kimchi on the side.
