How to Make It

  1. 1

Blend dry rolled oats for 30-45 seconds to make oat flour.

Tip: Don't blend too fine — slight texture is fine.
  2. 2

Bring water to rolling boil. Add salt.

  3. 3

Reduce heat to medium. Add oat flour gradually while stirring constantly. It thickens quickly — break up any lumps.

  4. 4

Cook on medium-low 4-5 minutes, turning constantly. Ready when smooth, pulls away from pot, holds shape. Pale tan colour.

  5. 5

Portion with wet spoon. Serve immediately with any soup. Neutral flavour won't compete with the soup.

Tip: For diabetics: pair with egusi, efo riro, or bitter leaf soup for a complete low-GI Nigerian meal.
