Nigerian Wara & Cucumber Dip with Masa Flatbread
A refreshing Nigerian-inspired dip made with creamy wara (fresh cow's milk cheese similar to paneer), grated cucumber, garlic, and scent leaf — served alongside crispy masa flatbread for a wholesome, protein-rich snack. This dish reimagines the classic yogurt dip concept using locally available Nigerian dairy and herbs, making it both culturally familiar and nutritionally powerful. Perfect as a light snack or appetizer for those managing weight, blood sugar, or seeking a high-protein, gut-friendly option.

How to Make It
- 1
Prepare the Cucumber
Peel and deseed the cucumber, then grate it coarsely. Place the grated cucumber in a clean muslin cloth or fine sieve and squeeze out as much water as possible. This step is critical — excess moisture will make your dip watery and affect its thick, creamy texture.
Tip: Salt the grated cucumber lightly and let it sit for 5 minutes before squeezing to draw out even more liquid. - 2
Blend the Wara Base
Place the wara cheese into a blender or food processor. Add the plain yogurt and blend on medium speed until you achieve a smooth, creamy consistency similar to a thick Greek yogurt dip. If the mixture is too thick, add an extra tablespoon of yogurt or a splash of cold water. Transfer to a mixing bowl.
Tip: If you cannot find wara, substitute with well-drained fresh tofu or smooth cottage cheese for a similar texture and protein profile. - 3
Combine the Dip
Add the drained cucumber, minced garlic, chopped scent leaf, lemon juice, white pepper, cayenne (if using), and salt to the blended wara base. Stir everything thoroughly until fully combined. Taste and adjust seasoning — the dip should be tangy, garlicky, fresh, and herby. Cover and refrigerate for at least 10 minutes to allow flavours to develop.
Tip: Scent leaf can be bold — start with a small amount and increase to taste. You can also blend half the scent leaf into the wara and fold in the rest for texture contrast. - 4
Make the Masa Flatbread Dough
In a medium mixing bowl, combine the masa flour, baking powder, and salt. Gradually add warm water while mixing with your hands or a wooden spoon until a soft, pliable dough forms — it should not be sticky or crumbly. Divide the dough into 8 equal balls and flatten each into a thin round disc about 5mm thick using your palms or a rolling pin.
Tip: For a lower-glycaemic option, replace half the masa flour with oat flour or tiger nut flour to add fibre and reduce the glycaemic load. - 5
Cook the Masa Flatbreads
Heat a cast-iron skillet or non-stick pan over medium heat and brush lightly with a small amount of groundnut oil. Cook each flatbread disc for 2–3 minutes per side until golden-brown spots appear and the bread is cooked through. Work in batches and keep cooked flatbreads warm wrapped in a clean cloth.
Tip: For an even lighter option, you can dry-toast the masa in a pan without oil — they will still develop a slightly crisp texture with a softer interior. - 6
Plate and Serve
Spoon the chilled wara and cucumber dip into a serving bowl. Use the back of the spoon to create a shallow well in the centre, then drizzle with cold-pressed groundnut oil or olive oil. Garnish with a few fresh scent leaf leaves and a light dusting of tatashe or paprika for colour. Arrange the warm masa flatbreads around the bowl and serve immediately.
Tip: This dip can be made up to 24 hours in advance and stored in an airtight container in the refrigerator — the flavour actually deepens and improves overnight.
