How to Make It
- 1
Prepare and Blend the Bean Base
Rinse the pre-soaked black-eyed beans thoroughly and remove as many skins as possible by rubbing between your palms. Transfer the peeled beans to a blender and blend with 100ml of low-sodium vegetable stock until you achieve a very smooth, thick batter. The smoother the batter, the better the final texture of your Moi Moi.
Tip: Soak beans overnight for easier peeling and a creamier blend. Avoid adding too much water — a thick batter holds its shape better when steamed. - 2
Prepare the Pepper and Vegetable Mix
Blend the red bell pepper, scotch bonnet, and half the onion together into a smooth paste. In a separate bowl, combine the finely diced green bell pepper, remaining red onion, and chopped spinach. Set both aside.
Tip: If you prefer less heat, deseed the scotch bonnet before blending. The spinach adds folate and iron — do not omit it. - 3
Season and Mix the Batter
Pour the blended bean batter into a large mixing bowl. Add the blended pepper paste, diced vegetables, ground crayfish, uziza seeds, turmeric, low-sodium salt, palm oil, and beaten eggs. Mix everything thoroughly until fully combined. Gradually add the remaining 100ml stock to achieve a thick but pourable consistency. Fold in the flaked mackerel gently.
Tip: Taste the batter before wrapping — this is your best chance to adjust seasoning. The batter should taste slightly bold as steaming mellows the flavour. - 4
Prepare the Banana Leaf Parcels
If using banana leaves, briefly pass them over an open flame or dip in boiling water for 10 seconds to make them pliable and prevent cracking. Cut into rectangular sheets approximately 30x25cm. For aluminium foil, simply cut to similar size. Lightly brush each sheet with a tiny drop of palm oil to prevent sticking.
Tip: Banana leaves add a subtle earthy aroma to the Moi Moi that foil cannot replicate. Try to source them from Nigerian markets or Asian grocery stores. - 5
Fill and Wrap the Parcels
Spoon approximately 3–4 tablespoons of the batter into the centre of each banana leaf or foil sheet. Place half a boiled egg in the centre of each portion if using. Carefully fold the sides of the leaf over the batter, then fold the top and bottom ends underneath to form a neat sealed parcel. Secure with a toothpick or tie with a strip of leaf if needed.
Tip: Do not overfill — the batter expands as it steams. Leave a little room at the top of each parcel. - 6
Steam the Parcels
Arrange the wrapped parcels upright or flat in a large pot fitted with a steaming rack. Add enough water to the pot to steam without touching the parcels. Cover tightly and steam over medium heat for 40–45 minutes. Check the water level halfway through and add more boiling water if needed. The Moi Moi is ready when it feels firm to the touch and pulls away cleanly from the wrapping.
Tip: Resist opening the pot frequently — consistent steam is key to evenly cooked, firm Moi Moi. A tight-fitting lid is essential. - 7
Rest, Serve, and Enjoy
Remove parcels from the steamer and allow to rest for 5 minutes before unwrapping. Serve warm as a standalone protein-rich snack, alongside a bowl of vegetable soup, or with a side of fresh cucumber and tomato salad for a balanced clinical meal. Leftovers can be refrigerated for up to 3 days or frozen for up to 2 weeks.
Tip: For meal prep, make a double batch and freeze individual portions. Reheat by re-steaming for 10–15 minutes — do not microwave as it alters the texture.
