Nigerian Spicy Sardine Toast

A beloved Nigerian street-food staple, this sardine toast brings together the bold heat of fresh chilli, the brightness of lemon, and the rich umami of canned sardines piled high on crusty bread. Quick to prepare yet deeply satisfying, it is a go-to snack across Nigerian households and roadside stalls alike. Loaded with heart-healthy omega-3 fatty acids and lean protein, it nourishes as much as it delights.

How to Make It

  1. 1

    Drain and prepare the sardines

Open the tins of sardines and drain off most of the tomato sauce, reserving a small spoonful to keep the mixture moist. Tip the sardines into a medium bowl and use a fork to mash them thoroughly, breaking down the bones completely. The bones are soft, edible, and an excellent source of calcium — do not discard them.

Tip: Mashing the bones into the flesh boosts the calcium content significantly without affecting texture or flavour.
  2. 2

    Build the spicy sardine mixture

Add the finely diced red onion, chopped fresh chilli, diced tomato, and chopped parsley or scent leaf to the mashed sardines. Squeeze in the fresh lemon juice, add a pinch of black pepper, and drizzle in the oil if using. Stir everything together until well combined. Taste and adjust chilli or lemon to your preference. Add salt cautiously, as the sardines already carry natural sodium.

Tip: Scent leaf (efirin) is the more traditional Nigerian herb here and gives the mixture a distinctive aromatic depth that parsley cannot fully replicate.
  3. 3

    Toast the bread

Toast the wholemeal bread slices until golden and firm. A sturdy toast holds the sardine topping without becoming soggy. If you do not have a toaster, place slices under a grill or in a dry non-stick pan over medium heat for 1 to 2 minutes per side.

Tip: Wholemeal or whole grain bread lowers the glycaemic load of this snack and adds additional fibre, making it more suitable for blood sugar management.
  4. 4

    Assemble and serve

Spoon the sardine mixture generously onto each slice of toast, spreading it evenly to the edges. Garnish with an extra pinch of fresh chilli or a wedge of lemon on the side. Serve immediately while the toast is still crisp.

Tip: For a more filling meal, serve alongside sliced fresh cucumber or a small portion of avocado to add healthy fats and cooling contrast to the heat.
