How to Make It
- 1
Blend the Pepper Sauce Base
Add the tatashe peppers, fresh tomatoes, and scotch bonnet pepper to a blender. Blend until smooth. Pour into a wide saucepan and cook over medium heat for 15–18 minutes, stirring occasionally, until the excess water evaporates and the mixture thickens and deepens in colour. Set aside.
Tip: Cooking out the rawness of the blended peppers is essential — this step prevents a sour sauce and builds rich flavour. - 2
Prepare the Turkey Meatball Mixture
In a large mixing bowl, combine the ground turkey, finely chopped uziza leaves, ground crayfish, 2 grated garlic cloves, grated ginger, grated onion (half portion), egg, oat flour, ground ehuru, cumin, black pepper, and a pinch of low-sodium seasoning. Mix thoroughly with clean hands or a spatula until all ingredients are evenly combined. Do not overmix.
Tip: Chilling the mixture for 10 minutes in the fridge before shaping makes it easier to roll and helps the meatballs hold their shape during cooking. - 3
Shape and Sear the Meatballs
Divide the mixture into 16 equal portions and roll each into a smooth ball (approximately 40g each). Heat a non-stick pan or cast iron skillet over medium-high heat and lightly spray with cooking spray or use a minimal amount of oil. Sear the meatballs in batches for 2–3 minutes per side until golden brown on the outside. They do not need to be fully cooked at this stage.
Tip: Searing creates a flavour crust and locks in moisture — do not crowd the pan or the meatballs will steam instead of brown. - 4
Build the Sauce
In the same wide saucepan used for the pepper base, heat the palm oil over medium heat. Add the diced onion and minced garlic and sauté for 3 minutes until soft and fragrant. Stir in the tomato paste and cook for 2 minutes. Pour in the cooked pepper blend and the low-sodium stock. Stir to combine and season lightly with salt and remaining seasoning powder.
Tip: Using just one tablespoon of palm oil provides its anti-inflammatory vitamin E and beta-carotene benefits without overloading saturated fat. - 5
Simmer the Meatballs in Sauce
Gently nestle the seared meatballs into the simmering sauce. Cover the pot and cook over low-medium heat for 18–20 minutes, turning the meatballs halfway through, until they are fully cooked through (internal temperature of 74°C / 165°F). The sauce should thicken and cling to the meatballs beautifully.
Tip: Use a meat thermometer to confirm doneness — this is especially important with turkey, which must be fully cooked. - 6
Finish with Greens and Serve
In the final 2 minutes of cooking, stir in the fresh spinach or chopped ugwu leaves and allow them to wilt into the sauce. Taste and adjust seasoning if needed. Serve 4 meatballs per portion over ofada rice, cauliflower rice, boiled yam, or steamed plantain. Garnish with a sprinkle of fresh uziza or scent leaves.
Tip: Adding greens at the end preserves their folate, iron, and vitamin C content — perfect for immune support and lactating mothers.
