Nigerian Groundnut & Oat Energy Balls with Tiger Nut and Dates

These no-bake energy balls combine the beloved Nigerian groundnut (peanut) with wholesome oats, natural tiger nut flour, and Medjool dates for a powerful, portable snack rooted in West African tradition. Sweetened naturally with dates and a touch of raw honey, they deliver sustained energy without refined sugar spikes — making them ideal for busy Lagos mornings, market days, or post-workout recovery. Rich in plant protein, healthy fats, and prebiotic fiber, they are a delicious nod to the groundnut culture that runs deep across Nigeria.

How to Make It

  1. 1

    Toast the Oats and Benniseed

Place the rolled oats and sesame seeds (benniseed) in a dry non-stick pan over medium-low heat. Toast for 4–5 minutes, stirring constantly, until the oats are lightly golden and the sesame seeds begin to pop. Remove from heat and allow to cool completely in a wide bowl. This step deepens the flavour and improves the texture of your energy balls.

Tip: Do not walk away during toasting — oats burn quickly. The aroma will tell you when they are ready.
  2. 2

    Blend the Date Paste

Drain the soaked Medjool dates and place them in a small blender or food processor. Blend with 1–2 tablespoons of the soaking water until you have a smooth, sticky paste. This natural paste acts as the primary sweetener and binding agent, replacing refined sugar entirely.

Tip: If your dates are very fresh and soft, soaking may not be necessary. The paste should be thick — not watery.
  3. 3

    Combine the Dry Ingredients

To the bowl of cooled toasted oats and benniseed, add the tiger nut flour, chia seeds, cocoa powder, ground cinnamon, and ground ginger. Mix well with a wooden spoon or spatula until all dry ingredients are evenly distributed.

Tip: Tiger nut flour (ofio flour) can be found in major Nigerian markets and health food stores in Lagos, Abuja, and Port Harcourt. It adds a lovely earthy sweetness.
  4. 4

    Add the Wet Ingredients

Add the groundnut paste, blended date paste, raw honey, and vanilla extract to the dry mixture. Mix vigorously until everything comes together into a thick, cohesive dough. If the mixture is too dry and crumbly, add water one teaspoon at a time. If too wet, add a tablespoon of extra oats.

Tip: Local Nigerian groundnut paste from the market is ideal — it is freshly ground, unsweetened, and has a richer flavour than imported peanut butter.
  5. 5

    Chill the Mixture

Cover the bowl with cling film or a clean plate and refrigerate for 15–20 minutes. Chilling firms the dough, making it much easier to roll into neat balls without the mixture sticking to your hands.

Tip: This step is especially important in Nigeria's warm climate where the groundnut paste can stay very soft at room temperature.
  6. 6

Roll and Coat the Energy Balls

Remove the chilled mixture from the refrigerator. Using a tablespoon or a small ice cream scoop, portion out equal amounts of dough. Roll each portion firmly between your palms to form a smooth ball approximately 3–4 cm in diameter. Spread the desiccated coconut on a flat plate and gently roll each ball in the coconut to coat. You should get approximately 14–16 balls.

Tip: Lightly dampen your palms with cold water if the dough sticks to your hands. For variety, roll some balls in extra cocoa powder and others in the coconut for a beautiful presentation.

    Set and Store

Arrange the finished energy balls on a lined tray or airtight container. Refrigerate for at least 30 minutes to firm up completely before serving. Store in the refrigerator in an airtight container for up to 7 days, or freeze for up to 4 weeks. Remove from the freezer 5 minutes before eating.

Tip: These are perfect for meal prep — make a double batch on Sunday and enjoy a nourishing snack all week. They travel well in a small cooler bag for office or school.
