How to Make It
- 1
Cook the Ofada Rice
Drain the soaked Ofada rice and place in a medium saucepan with 400ml of water. Bring to a boil over medium-high heat, then reduce to a low simmer. Cover and cook for 30–35 minutes until tender but firm (al dente). Remove from heat and allow to cool slightly for 10 minutes.
Tip: Ofada rice has a naturally nutty, earthy aroma. Do not overcook — a slightly firm grain holds together better in the rolls and has a lower glycaemic index than soft-cooked rice. - 2
Season the Rice
Transfer the warm (not hot) cooked rice into a wide mixing bowl. Add the apple cider vinegar, extra virgin olive oil, minced garlic, grated ginger, ground crayfish, finely chopped uziza leaves, and dawadawa paste or low-sodium soy sauce. Gently fold everything together with a wooden spatula until evenly combined. Taste and adjust seasoning. Allow to cool to room temperature before rolling.
Tip: Spreading the rice on a wide flat tray and fanning it as you fold helps cool it faster and gives it the slightly sticky texture needed for rolling without making it mushy. - 3
Prepare the Vegetables
Using a sharp knife or mandoline, slice the cucumber lengthwise into long, flat ribbons approximately 2–3mm thick — these will serve as your edible 'nori' wrapper. Pat dry with a clean cloth. Steam the garden egg slices for 3–4 minutes until just tender. Julienne the carrots into fine matchsticks. Slice the avocado and immediately toss in fresh lemon juice to retain colour.
Tip: Select cucumbers with thin skin and minimal seeds — Nigerian garden varieties or the long seedless type work best. The drier your cucumber ribbons, the better they will hold the filling without slipping. - 4
Assemble the Rolls
Lay two to three overlapping cucumber ribbons flat on a clean bamboo mat or a piece of cling film on your work surface, forming a rectangle approximately 15cm x 10cm. Spread a thin, even layer of the seasoned Ofada rice (about 3–4 tablespoons) across the cucumber, leaving a 2cm border at the top edge. Arrange 2–3 strips of avocado, a few julienned carrots, and 1–2 garden egg slices horizontally across the centre of the rice.
Tip: Do not overfill — less is more when rolling. Overstuffed rolls will burst and become difficult to slice cleanly. - 5
Roll and Seal
Using the bamboo mat or cling film as a guide, carefully lift the bottom edge and roll the cucumber tightly over the filling, applying gentle, even pressure as you go. Continue rolling forward, tucking in the sides if needed, until you reach the bare top border of cucumber. Press gently along the roll to seal and shape. Repeat with remaining ingredients to form 4 rolls total.
Tip: A little moisture at the top edge of the cucumber helps it seal. If the roll feels loose, wrap it tightly in cling film and refrigerate for 5 minutes to firm up before slicing. - 6
Slice and Plate
Using a sharp, slightly damp knife, slice each roll into 6–8 equal pieces with a smooth, single-stroke cutting motion — avoid sawing back and forth. Arrange sliced rolls cut-side up on a clean serving plate. Sprinkle toasted sesame seeds over the top and finish with a light squeeze of fresh lemon juice.
Tip: Wiping your knife blade with a damp cloth between each cut gives you clean, restaurant-quality slices without tearing the cucumber. - 7
Serve with a Nigerian Dipping Sauce
Serve immediately alongside a small bowl of dipping sauce made from 1 tablespoon of low-sodium soy sauce or diluted dawadawa, ½ teaspoon of freshly grated ginger, a dash of lemon juice, and a tiny pinch of dried chilli flakes. Rolls are best enjoyed fresh but can be refrigerated for up to 4 hours wrapped tightly in cling film.
Tip: For a diabetes-friendly presentation, pair with a small side of fresh garden egg salad or a cup of unsweetened zobo (hibiscus tea) for a complete, balanced light meal.
