Nigerian Efo Riro Spinach & Egg Baked Frittata
Inspired by the beloved Yoruba efo riro, this hearty baked frittata transforms Nigeria's finest leafy greens — spinach and tete (African spinach) — into a protein-rich, clinic-approved one-pan meal. Loaded with eggs, locust beans, and aromatic peppers, it delivers bold West African flavour without the excess oil of traditional frying. A perfect low-carb, nutrient-dense option for managing blood sugar while keeping every meal deeply satisfying and culturally rooted.

How to Make It
- 1
Preheat & Prepare Your Baking Dish
Preheat your oven to 180°C (350°F). Lightly grease a 22cm round oven-safe dish or cast-iron pan with olive oil. Set aside. This ensures the frittata releases cleanly and bakes evenly.
Tip: A cast-iron pan retains heat beautifully and gives the frittata a lightly golden crust on the bottom — highly recommended. - 2
Blend Your Pepper Base
In a blender, combine the red bell pepper (tatashe), scotch bonnet, half the onion, garlic, and grated ginger. Blend to a semi-smooth paste. Do not add water — you want a thick, concentrated blend to avoid a watery frittata.
Tip: Blending the aromatics together saves time and ensures every bite is evenly seasoned throughout. - 3
Sauté the Efo Riro Base
Heat the palm oil in a wide pan over medium heat until it melts and becomes fragrant (do not bleach it — unrefined red palm oil retains its nutrients best at low-medium heat). Add the sliced onion and fry for 2 minutes until soft. Add the pepper blend and stir well. Cook for 8–10 minutes, stirring occasionally, until the raw smell leaves and the sauce reduces and darkens slightly. Add the locust beans (iru), ground crayfish, turmeric, black pepper, and half the seasoning cube. Stir to combine.
Tip: This cooking-down step (the 'frying of the stew base') is crucial in Nigerian cooking — it concentrates flavour and removes excess moisture that would make the frittata soggy. - 4
Add the Spinach & Fish
Add the chopped spinach to the pepper base in two batches, stirring each batch until wilted before adding the next. This prevents the pan from overcrowding. Once all the spinach is wilted (about 3–4 minutes), fold in the flaked smoked mackerel and halved cherry tomatoes. Taste and adjust seasoning minimally. Remove from heat and allow to cool for 5 minutes.
Tip: Do not overcook the spinach — it should still be vibrant green. Overcooked spinach loses key nutrients including folate and iron, which are vital for many clinical conditions. - 5
Prepare the Egg Mixture
In a large bowl, crack all 6 eggs and beat well with a fork or whisk. Add the low-fat evaporated milk, a pinch of salt, and the remaining half seasoning cube. Whisk until smooth, pale, and slightly frothy. The milk adds creaminess and helps the frittata set with a softer, more custard-like texture.
Tip: For a higher-protein, lower-fat version, replace 2 whole eggs with 4 egg whites. This is especially beneficial for clients managing cholesterol. - 6
Combine & Pour Into Dish
Pour the cooled efo riro spinach and fish mixture into the egg bowl and mix gently until evenly distributed. Pour the combined mixture into your greased baking dish. Use a spoon to ensure the spinach and fish are spread evenly throughout the dish.
Tip: Allowing the spinach base to cool before combining prevents the eggs from cooking prematurely, which gives a more uniform set. - 7
Bake to Golden Perfection
Place the dish in the preheated oven on the middle rack. Bake at 180°C for 28–35 minutes, or until the frittata is fully set in the centre (a skewer inserted comes out clean) and lightly golden on top. If the top browns too quickly, cover loosely with foil for the last 10 minutes.
Tip: Resist opening the oven in the first 20 minutes — fluctuating heat causes the frittata to collapse in the centre. - 8
Rest, Slice & Serve
Remove from the oven and allow to rest for 5–8 minutes before slicing. This resting time allows the frittata to firm up fully and makes clean slicing easier. Serve warm in wedges. Pairs beautifully with a small side of sliced cucumber, plain jollof ofada rice (for non-diabetic clients), or simply on its own as a satisfying light meal.
Tip: This frittata keeps well in the fridge for up to 3 days in an airtight container — ideal for meal prep. Reheat gently in the oven or microwave with a damp paper towel on top to retain moisture.
