Nigerian Catfish Pepper Soup (Point & Kill Style)
A deeply aromatic, fiery broth built on the bold flavours of traditional Nigerian pepper soup spices — ehuru, uda, and uziza — simmered with fresh catfish cuts to deliver both comfort and serious therapeutic value. Beloved across Nigerian households and bukaterias alike, this recipe is clinically refined to reduce sodium and maximise anti-inflammatory compounds without sacrificing the authentic taste. It is especially nourishing during recovery from illness, postpartum healing, or as a warming high-protein meal for managing inflammation and metabolic health.

How to Make It
- 1
Prepare the Pepper Soup Spice Blend
Lightly dry-toast the ehuru seeds in a small pan over low heat for 2–3 minutes until fragrant. Allow to cool, then crack and peel the outer shell. Combine the peeled ehuru, uda pods (seeds removed), Cameroon pepper, and ground coriander into a dry blender or spice grinder. Blitz into a coarse-to-medium powder. Set aside.
Tip: Toasting the ehuru unlocks its essential oils and dramatically improves the depth of your broth. Do not skip this step. - 2
Clean and Season the Catfish
Rinse the catfish chunks thoroughly under cold running water. To remove sliminess, pour boiling water over the fish in a colander, then rinse again with cold water. Pat dry lightly. Place in a bowl and rub with a small pinch of salt and half the sliced ginger. Allow to rest for 10 minutes while you prepare your broth base.
Tip: The hot water rinse is a traditional Nigerian technique that removes mucus and reduces fishiness without altering the nutritional integrity of the protein. - 3
Build the Aromatic Broth Base
Pour 1200 ml of water into a medium-large pot over medium-high heat. Add the chopped onion, crushed garlic, remaining ginger slices, and the whole scotch bonnet pepper. Bring to a gentle boil and allow to simmer for 8 minutes to infuse the water with aromatics before adding the fish.
Tip: Building the broth with aromatics first means the catfish cooks in a flavoured liquid, extracting more depth in a shorter cook time. - 4
Add the Catfish and Pepper Soup Spices
Carefully lower the seasoned catfish chunks into the simmering aromatic broth. Add the freshly ground pepper soup spice blend, ground crayfish, and the half seasoning cube if using. Stir gently to distribute the spices without breaking the fish. Reduce heat to medium and simmer uncovered for 15–18 minutes, or until the catfish is just cooked through and the broth has taken on a rich amber colour.
Tip: Do not over-stir — catfish is delicate and will break apart. A gentle shake of the pot is enough to incorporate spices as it simmers. - 5
Finish with Fresh Leaves and Adjust Seasoning
In the final 3 minutes of cooking, add the torn uziza leaves and shredded utazi leaves directly into the pot. Taste the broth and adjust seasoning with a small pinch of salt only if needed — the crayfish and spices should already carry strong flavour. Turn off the heat and stir in the fresh scent leaves (efirin). Cover the pot and allow to rest for 2 minutes before serving.
Tip: Adding the leaves at the very end preserves their volatile anti-inflammatory compounds and vibrant colour. Cooking them too long destroys much of their clinical benefit. - 6
Serve and Present
Ladle the pepper soup into deep bowls, ensuring each serving gets 1–2 generous pieces of catfish and a good amount of the spiced broth. Serve hot as a standalone light meal or alongside a small portion of unripe plantain, ofada rice, or boiled yam for a more complete macronutrient profile. Garnish with a few extra torn scent leaves.
Tip: For patients managing hypertension or on a calorie-controlled plan, serve without any starchy accompaniment — the broth and protein alone are deeply satisfying and clinically sufficient.
