How to Make It

  1. 1

    Prepare Your Ingredients

Rinse the brown parboiled rice under cold running water until the water runs clear. Flake the deboned smoked mackerel into medium chunks, discarding any remaining bones and skin. Dice carrots and garden eggs, slice green beans, roughly chop spinach, mince garlic, and grate ginger. Blend tomatoes, tatashe, and scotch bonnet together until smooth.

Tip: Soaking the rice for 15 minutes before cooking reduces cooking time and lowers the glycaemic impact slightly.
  2. 2

    Build the Flavour Base

Heat palm oil in a wide, heavy-bottomed pot over medium heat. Add diced onions and sauté for 3–4 minutes until softened and fragrant. Add minced garlic, grated ginger, and iru (if using), stirring frequently for 1–2 minutes. Pour in the blended tomato-pepper mixture and cook uncovered for 8–10 minutes, stirring occasionally, until the raw tomato smell dissipates and the sauce reduces slightly.

Tip: Cooking out the tomato blend thoroughly prevents sourness and aids digestibility. This step also deepens the flavour without added salt.
  3. 3

    Cook the Rice in Stock

Add the washed rice directly into the pot with the tomato base and stir to coat evenly. Pour in the low-sodium fish or vegetable stock, add bay leaves, turmeric, and ground crayfish. Stir everything together, bring to a boil, then reduce heat to low. Cover tightly and cook for 20–25 minutes, checking occasionally and adding small amounts of warm water if needed to prevent burning.

Tip: Brown parboiled rice takes longer to cook than white rice. Resist the urge to lift the lid frequently — the steam is essential for even cooking.
  4. 4

    Add Protein and Vegetables

Once the rice is about 80% cooked and most of the liquid is absorbed, gently fold in the flaked smoked mackerel, diced carrots, sliced green beans, and diced garden eggs. Stir lightly to distribute without breaking up the fish too much. Cover and cook for another 7–8 minutes until the vegetables are tender but still vibrant in colour.

Tip: Adding vegetables at this stage preserves their nutrients, texture, and colour — overcooking destroys heat-sensitive vitamins like vitamin C and folate.
  5. 5

Finish with Leafy Greens and Season

In the final 3 minutes of cooking, stir in the chopped spinach or efo tete. The residual heat will wilt the leaves perfectly. Remove the bay leaves. Taste the rice and add only a small pinch of sea salt or potassium salt substitute if needed. Remove from heat, fluff gently with a fork, and allow to rest covered for 5 minutes before serving.

Tip: Seasoning at the very end gives you full control over sodium content, which is critical for heart health and blood pressure management.
  6. 6

    Serve and Plate

Scoop a generous portion into a bowl or plate. Serve hot as a complete balanced meal. Pair with a small side of sliced fresh cucumber or a light pepper vegetable salad for additional hydration and micronutrients. Leftovers store well in an airtight container in the refrigerator for up to 3 days.

Tip: This dish reheats excellently for meal prep. Add a tablespoon of warm water before reheating to restore moisture without adding extra oil or salt.
