Moroccan Msemen with Raw Honey & Whole Wheat
Msemen is a beloved Moroccan flatbread with centuries of tradition behind its satisfying, flaky layers — folded by hand and pan-fried to golden perfection. This nourishing version blends whole wheat and semolina for added fibre and a nutty depth, paired with a light drizzle of raw honey for a naturally sweet finish. A staple of Moroccan morning culture, best enjoyed warm with mint tea alongside family.

How to Make It
- 1
Mix the Dough
In a large mixing bowl, combine whole wheat flour, semolina (100g), all-purpose flour, instant yeast, and salt. Gradually add warm water while mixing with your hands or a dough hook until a soft, smooth, non-sticky dough forms. The dough should feel supple — adjust water by the tablespoon if needed.
Tip: Warm water should be around 38°C (100°F) — comfortable to the touch, not hot. Hot water kills yeast activity. - 2
Rest the Dough
Divide the dough into 6 equal balls (approximately 120g each). Place on a lightly oiled tray, cover with a damp cloth, and allow to rest for 15–20 minutes. This relaxes the gluten and makes shaping much easier.
Tip: Do not skip the rest period — it is what allows the dough to spread thinly without tearing during the folding process. - 3
Prepare the Layering Mixture
In a small bowl, combine the softened unsalted butter and olive oil. Mix until smooth and spreadable. Keep the extra fine semolina (30g) in a small dish nearby for dusting. This combination of butter and olive oil reduces saturated fat compared to traditional all-butter versions while preserving the authentic flavour.
Tip: Room temperature butter blends far more easily with olive oil — do not use melted butter as it will separate. - 4
Flatten and Layer
On a lightly oiled work surface, take one dough ball and use your fingertips to press and stretch it outward into a very thin, nearly translucent rectangle. Spread a thin layer of the butter-olive oil mixture across the entire surface and dust lightly with fine semolina. Fold one-third of the dough inward, then fold the other third over it (like a letter), creating a long strip. Then fold the strip in thirds again to form a small square. Repeat with all dough balls.
Tip: The thinner you stretch the dough, the flakier the layers will be. Take your time on this step — it defines the texture of the msemen. - 5
Second Rest
Place the folded squares on an oiled surface, cover lightly, and allow them to rest for another 10 minutes. This second rest allows the layers to set before cooking and prevents tearing when you press them flat.
Tip: Keep the squares covered to prevent drying out, which would cause cracking during the final press and cooking. - 6
Press and Cook
Heat a non-stick skillet or cast iron pan (no oil needed) over medium heat. Take one rested square and gently press it flat with your palms into a thin square roughly 15cm across. Place onto the dry hot pan. Cook for 2–3 minutes per side until golden brown patches appear and the surface looks dry with visible flaky layers. Repeat for remaining squares.
Tip: Resist pressing the msemen with a spatula while cooking — allow the natural steam between layers to puff the bread for maximum flakiness. - 7
Serve Warm with Honey
Transfer msemen to a serving plate immediately. Drizzle raw unfiltered honey lightly over each piece just before serving — approximately 1–2 teaspoons per portion. Serve alongside Moroccan mint tea for the full traditional breakfast experience.
Tip: Raw honey is used here intentionally — it retains beneficial enzymes, antioxidants, and a lower glycaemic impact compared to processed honey. Avoid warming or cooking honey to preserve these properties.
