Levantine Spiced Lamb Meatball Bowl with Freekeh, Hummus & Pickled Turnips

Tender, warmly spiced lamb kofta nestle over nutty freekeh grain, crowned with silky hummus, vibrant pickled turnips, and a generous dusting of za'atar — a deeply nourishing bowl rooted in Levantine tradition. Freekeh replaces white rice to deliver a lower glycaemic, high-fibre base that supports sustained energy and gut health without compromising authenticity. Every element of this dish reflects the bold, herbaceous soul of Middle Eastern home cooking.

How to Make It

  1. 1

    Make the Quick Pickled Turnips

Combine vinegar, water, and a small pinch of salt (0.5 g) in a small saucepan over medium heat. Stir until dissolved — do not boil. Place turnip matchsticks and beetroot slices in a clean glass jar or bowl. Pour the warm brine over them, ensuring the vegetables are submerged. Cool to room temperature, then refrigerate. The turnips will turn a vibrant pink within 30 minutes, deepening over time.

Tip: Make these up to 3 days ahead for a deeper flavour. The natural pink colour comes entirely from raw beetroot — no artificial colouring needed.
  2. 2

    Cook the Freekeh

Rinse cracked freekeh under cold water until water runs clear. In a medium saucepan, bring 600 ml of low-sodium stock to a boil. Add freekeh, stir once, then reduce to a low simmer. Cover and cook for 20–22 minutes until grain is tender and stock is absorbed. Remove from heat, leave covered for 5 minutes, then fluff with a fork.

Tip: Freekeh has a significantly lower glycaemic index than white rice (GI ~43 vs ~73), making it ideal for blood sugar management. It is also rich in prebiotic fibre to support gut microbiome diversity.
  3. 3

    Prepare the Lamb Kofta Meatballs

In a large bowl, combine ground lamb, grated onion, 2 minced garlic cloves, chopped parsley, cumin, coriander, cinnamon, allspice, smoked paprika, egg, 1.5 g salt, and black pepper. Mix gently with hands until just combined — do not overwork or the meatballs will tighten. Divide into 20 equal portions (approximately 25 g each) and roll into smooth balls. Refrigerate for 10 minutes if time allows.

Tip: Chilling the meatballs briefly helps them hold their shape during cooking. Using lean lamb (≤15% fat) meaningfully reduces saturated fat per serving while keeping the dish clinically appropriate for heart health.
  4. 4

    Cook the Meatballs

Heat a large non-stick or cast iron pan over medium-high heat with 10 ml olive oil. Working in batches of 10, add meatballs without crowding. Cook for 8–10 minutes, turning every 2 minutes, until browned on all sides and internal temperature reaches 74°C (165°F). Transfer to a warm plate. Deglaze pan with a splash of water between batches.

Tip: Avoid pressing the meatballs flat during cooking — keeping them round preserves moisture. An instant-read thermometer ensures safe doneness without over-cooking.
  5. 5

    Blend the Hummus

Drain and rinse chickpeas thoroughly. For ultra-smooth hummus, rub chickpeas between your palms in a bowl of water to remove the skins (optional but recommended). Add chickpeas to a food processor with tahini, lemon juice, 2 remaining minced garlic cloves, and a pinch of salt (0.5 g). Process for 2 minutes. With the motor running, slowly add 30 ml of ice water and 10 ml olive oil. Process for a further 2 minutes until creamy and pale.

Tip: The ice water creates an emulsified, aerated hummus without adding cream or excess fat. Chickpeas provide plant-based protein, soluble fibre (supporting cholesterol management), and a low glycaemic carbohydrate source.
  6. 6

    Assemble the Bowls

Spoon a generous base of freekeh into each bowl (approximately 150 g cooked per serving). Arrange 5 lamb meatballs to one side. Add a large dollop of hummus (approximately 80 g), a portion of drained pickled turnips, sliced cucumber, and halved cherry tomatoes. Drizzle the entire bowl with the remaining olive oil, dust generously with za'atar, and scatter toasted pine nuts and extra fresh parsley over the top.

Tip: For meal prep, store each component separately in airtight containers for up to 4 days. Assemble bowls fresh to preserve texture. Pickled turnips continue to improve in flavour over 48–72 hours.
