How to Make It

  1. 1

    Marinate the Chicken

In a shallow bowl or zip-lock bag, combine 20 ml olive oil, 2 minced garlic cloves, 30 ml lemon juice, dried oregano, smoked paprika, black pepper, and half the sea salt. Add the chicken breasts, coat thoroughly, and marinate for a minimum of 20 minutes at room temperature or up to 8 hours in the refrigerator.

Tip: Longer marinating time dramatically improves flavour depth and keeps the breast moist on the grill. Score thick portions with a knife to help the marinade penetrate.
  2. 2

    Roast the Chickpeas

Preheat oven to 200°C (fan 180°C / 400°F). Spread the dried chickpeas on a lined baking tray. Drizzle with 15 ml olive oil, then toss with ground cumin, chilli flakes, and a pinch of remaining salt. Roast for 25–30 minutes, shaking the tray halfway through, until golden and audibly crispy.

Tip: The drying step is critical — any residual moisture from the can will steam the chickpeas instead of crisping them. Pat thoroughly with a clean kitchen towel before seasoning.
  3. 3

    Cook the Quinoa

Place the rinsed quinoa in a medium saucepan with the stock. Bring to a boil over medium-high heat, then reduce to a low simmer, cover, and cook for 13–15 minutes until all liquid is absorbed. Remove from heat and rest, covered, for 5 minutes. Fluff gently with a fork and allow to cool slightly.

Tip: Cooking quinoa in stock instead of water adds a savoury depth that compensates for reduced salt in the overall dish.
  4. 4

    Massage the Kale

Place the torn kale leaves in a large salad bowl. Drizzle with the remaining 10 ml olive oil and 15 ml lemon juice. Using clean hands, massage the kale firmly for 2–3 minutes until the leaves soften noticeably, reduce in volume, and turn a deeper shade of green.

Tip: Massaging breaks down the tough cellular structure of kale, making it easier to chew and significantly more digestible — particularly important for clients with gut sensitivities.
  5. 5

    Grill the Chicken

Heat a grill pan or outdoor grill to medium-high. Cook the marinated chicken for 5–7 minutes per side, depending on thickness, until internal temperature reaches 74°C (165°F) and clear grill marks are visible. Transfer to a cutting board and rest for 5 minutes before slicing diagonally into strips.

Tip: Resting the chicken after cooking allows juices to redistribute. Cutting immediately will cause moisture loss and a drier texture.
  6. 6

    Prepare the Tahini-Lemon Dressing

In a small bowl, whisk together tahini, remaining garlic, apple cider vinegar, Dijon mustard, honey, and warm water until smooth and pourable. The dressing should lightly coat the back of a spoon. Adjust consistency with additional water, 5 ml at a time.

Tip: Tahini thickens as it sits. If making ahead, store separately and re-whisk before serving. For strict diabetes management, omit the honey entirely — the vinegar provides sufficient acidity.
  7. 7

    Assemble the Bowl

Divide the massaged kale evenly across four serving bowls. Spoon a generous portion of quinoa over the kale. Arrange sliced avocado, cherry tomatoes, cucumber, and soaked red onion artfully around the bowl. Lay the grilled chicken strips over the top, then scatter the crispy roasted chickpeas. Garnish with fresh parsley and pumpkin seeds.

Tip: For meal prep, store all components separately and assemble just before eating. Keep avocado whole or tossed in lemon juice to prevent oxidation. Dressing should always be stored apart.
  8. 8

    Dress and Serve

Drizzle the tahini-lemon dressing evenly over each assembled bowl just before serving. For a lighter option, serve the dressing on the side. Finish with an extra crack of black pepper and a wedge of fresh lemon.

Tip: This salad holds well for up to 3 days refrigerated if components are stored separately — making it an excellent high-protein meal-prep option for the working week.
