Cuban Medianoche Sandwich (Pressed & Balanced)

The Medianoche — named for the midnight hour when Cuban revelers would seek a satisfying late-night bite — is a celebrated classic of Cuban culinary tradition. This clinically refined version honours the iconic layers of slow-roasted pork, lean ham, Swiss cheese, tangy pickles, and yellow mustard pressed between lightly sweetened egg bread. Thoughtfully portioned and prepared with lower-sodium ingredients, it delivers bold, authentic flavour while supporting heart health and lean protein intake.

How to Make It

  1. 1

    Prepare the Mojo Marinade

In a bowl, whisk together the minced garlic, sour orange juice (or lime-orange blend), ground cumin, dried oregano, olive oil, black pepper, and a pinch of sea salt. This is the soul of authentic Cuban pork — the mojo. Place the pork loin in a zip-lock bag or shallow dish, pour the marinade over it, and ensure it is fully coated.

Tip: Marinate the pork for a minimum of 4 hours, ideally overnight in the refrigerator. The acid in the citrus both flavours and gently tenderises the meat.
  2. 2

Roast the Pork Loin (Lechón Asado)

Preheat your oven to 180°C (350°F). Remove the pork from the marinade and place it on a rack in a roasting pan. Roast for 60–75 minutes or until the internal temperature reaches 71°C (160°F). Rest the pork for 10 minutes before thinly slicing against the grain.

Tip: Using a rack allows air circulation for even browning without excess oil. Pork loin is a lean, high-protein cut that keeps saturated fat content lower than shoulder cuts traditionally used.
  3. 3

    Assemble the Sandwiches

Slice each medianoche roll horizontally. Spread a generous layer of yellow mustard on both the top and bottom inner faces of each roll. Layer the bottom half with: 2–3 slices of reduced-fat Swiss cheese, 50g of sliced low-sodium ham, 75g of thinly sliced roast pork, and a layer of dill pickle slices. Close the sandwich firmly with the top half of the roll.

Tip: Patting the pickle slices dry prevents the bread from becoming soggy during pressing — a key step for textural integrity.
  4. 4

    Press the Sandwiches (Plancha Method)

Lightly brush the outside surfaces of each sandwich with a very small amount of olive oil (approximately 1–2ml per sandwich). Heat a sandwich press, panini grill, or heavy cast-iron skillet over medium heat. Place the sandwich in the press and cook for 4–5 minutes, pressing firmly until the bread is golden and crisp, the cheese is melted, and the sandwich is heated through. If using a skillet, place a heavy pan on top to press and flip once after 3 minutes.

Tip: The characteristic golden, flattened crust of a proper Medianoche is achieved through firm, consistent pressure — do not rush on high heat or the bread will burn before the cheese melts.
  5. 5

    Rest, Slice, and Serve

Remove the sandwich from the press and allow it to rest for 1–2 minutes. Slice diagonally across the middle — the classic presentation reveals the beautiful layered interior. Serve immediately while the cheese is still melted and the bread is crisp. Pair with a small side of pickled vegetables or a simple green salad to complete the meal.

Tip: For a weight-management approach, serve with sliced cucumber and tomato rather than fried plantains. For higher calorie needs (e.g., lactating mothers or athletes), a side of tostones (twice-fried green plantains) is a culturally authentic and nutritious complement.
