How to Make It

  1. 1

    Create the Cocoa Paste

In a small saucepan over low-medium heat, combine the unsweetened cocoa powder with 60ml of water. Whisk continuously for 1–2 minutes until the mixture forms a smooth, lump-free paste. This step is critical — it fully blooms the cocoa, releasing its flavour compounds and ensuring a silky texture.

Tip: Never skip this step. Dissolving cocoa in water before adding milk prevents clumping and delivers a richer, more complex flavour.
  2. 2

    Add Milk and Warm Gently

Pour the milk slowly into the cocoa paste while whisking constantly. Increase heat to medium and continue to whisk as the mixture warms. Heat until steaming and just below a simmer — approximately 70–75°C (160–165°F). Do not bring to a full boil, as this can degrade heat-sensitive flavanols and alter the milk proteins.

Tip: Use a thermometer if available. Gentle heating preserves the beneficial antioxidants in the cocoa.
  3. 3

    Add Flavour Enhancers

Remove from heat. Add vanilla extract, ground cinnamon, a pinch of sea salt, and cayenne pepper if using. If adding collagen peptides or protein powder, whisk it in now while the liquid is hot to ensure it dissolves completely without clumping.

Tip: Cinnamon is not just flavour — studies suggest it may improve insulin sensitivity. It's a powerful functional addition to this drink.
  4. 4

    Sweeten Mindfully

Add maple syrup, honey, or your preferred low-glycemic sweetener to taste. Start with just 1 teaspoon and taste before adding more. For diabetes or PCOS management, use monk fruit sweetener or skip entirely — the vanilla and cinnamon provide natural perceived sweetness.

Tip: High-quality cocoa and vanilla extract are naturally aromatic and satisfying. Many people find they need far less sweetener than expected.
  5. 5

    Froth and Serve

For an elevated texture, use a handheld milk frother or blender to froth the hot chocolate for 15–20 seconds. This incorporates air for a café-style velvety finish. Pour immediately into a pre-warmed mug and serve hot.

Tip: Pre-warming your mug with a splash of hot water keeps the drink warm longer — especially important on cold days.
