How to Make It
- 1
Prepare the Mango
Peel and cube the ripe mango, removing all flesh from the pit. If using frozen mango, allow it to thaw for 5 minutes at room temperature for easier blending. The riper and more fragrant the mango, the less sweetener you will need.
Tip: Alphonso or Kesar mangoes are the gold standard for authentic flavour. If unavailable, Ataulfo (Champagne) mangoes are the closest substitute found in Western markets. - 2
Steep the Saffron (Optional)
If using saffron, place the strands into a small bowl with 1 teaspoon of warm (not boiling) milk. Allow to steep for 5 minutes until the milk turns a deep golden colour. This releases the saffron's bioactive compound crocin, which carries anti-inflammatory properties.
Tip: Never add saffron directly to the blender — pre-steeping maximises both colour and therapeutic benefit. - 3
Blend the Lassi
Add the mango cubes, yogurt, cold water or milk, ground cardamom, honey or coconut sugar (if using), rose water (if using), and the pinch of sea salt to a high-speed blender. Add the saffron milk if prepared. Blend on high for 45–60 seconds until completely smooth, thick, and creamy with no mango fibres remaining.
Tip: For a thicker, smoothie-style lassi blend in the ice cubes. For a traditional pourable lassi, add them to the glass at serving time. - 4
Taste and Adjust
Stop the blender and taste the lassi. Adjust sweetness by adding a little more honey if the mango is under-ripe, or add a splash more water or milk if the consistency is too thick. A well-balanced lassi should be creamy, lightly tangy from the yogurt, and naturally sweet from the mango.
Tip: The tang of the yogurt is intentional — it is the probiotic backbone of this drink. Do not over-sweeten, as this dulls the gut-health and anti-inflammatory benefits. - 5
Serve Authentically
Pour into tall chilled glasses over ice. Garnish with a light dusting of ground cardamom, a small saffron strand, or a thin slice of fresh mango on the rim. Serve immediately for optimal texture and probiotic potency.
Tip: Lassi is best consumed fresh. If meal-prepping, store the blended base (without ice) in a sealed jar in the refrigerator for up to 24 hours. Shake or stir well before serving as natural separation will occur.
