Breton Buckwheat Galettes with Ham, Gruyère & Soft Egg
A beloved staple of Brittany's crêperie culture, these rustic buckwheat galettes are naturally gluten-free and packed with slow-digesting complex carbohydrates, high-quality protein, and calcium-rich Gruyère. Filled with lean ham, a gently cooked egg, and melted cheese, they deliver a satisfying balance of macronutrients that supports stable blood sugar and sustained energy. This clinical reinterpretation honours every fold of the traditional complète while dialling back sodium and boosting nutritional density without compromising authenticity.

How to Make It
- 1
Rest the Buckwheat Batter
In a large mixing bowl, whisk together 200 g buckwheat flour, 2 g sea salt, 1 whole egg, and 500 ml cold water until a smooth, lump-free batter forms. The consistency should resemble thin cream — it will coat a spoon lightly. Cover the bowl with cling film and rest in the refrigerator for a minimum of 1 hour, or ideally overnight. Resting hydrates the flour fully and develops a more pliable, flavourful galette.
Tip: Resting the batter is non-negotiable for authentic Breton galettes. It reduces cooking cracking and improves texture significantly. - 2
Prepare Your Fillings
Finely grate 120 g of Gruyère cheese and set aside. Lay out 200 g of lean low-sodium ham slices (approximately 50 g per galette). Finely chop 10 g of fresh chives. Crack each of the 4 filling eggs into individual small ramekins so they are ready to pour — this ensures a seamless cooking process.
Tip: Grating Gruyère finely means it melts faster and more evenly, reducing the time the egg needs to be exposed to direct heat. - 3
Heat and Season the Pan
Place a large (28–30 cm) non-stick crêpe pan or cast-iron skillet over medium-high heat. When the pan is hot, add a very small knob of unsalted butter (about 3–4 g) and swirl to coat the surface evenly. The pan is ready when a drop of batter sizzles immediately on contact.
Tip: A well-seasoned cast-iron pan produces the signature lacy, crispy edges of a traditional galette. Avoid excessive butter which raises the caloric load unnecessarily. - 4
Cook the Galette Base
Pour approximately 80–90 ml of batter into the centre of the pan. Quickly tilt and rotate the pan in a circular motion to spread the batter into a thin, even round approximately 25–28 cm in diameter. Cook undisturbed for 90 seconds over medium-high heat until the edges begin to lift and turn golden and the surface appears dry and set.
Tip: Do not spread too slowly — the batter sets quickly. A wooden or silicone spreader (rozell) can help achieve restaurant-style thinness. - 5
Add the Filling and Fold
Once the galette surface is set, reduce heat to medium. Scatter 30 g of grated Gruyère evenly over the galette surface. Lay 50 g of ham in the centre, leaving a 6–7 cm border around the edges. Gently crack or pour one egg from its ramekin directly onto the centre of the ham. Season with a small pinch of black pepper. Cover the pan loosely with a lid or foil for 2–3 minutes until the egg white is fully set but the yolk remains soft and runny. Fold the four edges of the galette inward to form a square, exposing the egg yolk in the centre.
Tip: For firmer yolks (suitable for pregnancy or immunocompromised individuals), cover for an additional 1–2 minutes. The Breton tradition celebrates a runny yolk — rich in choline and fat-soluble vitamins. - 6
Finish and Serve
Slide the completed galette onto a warmed plate. Garnish immediately with freshly chopped chives. Repeat the process for the remaining three galettes, adding a small amount of butter to the pan between each one as needed. Serve immediately — galettes do not hold well and are best enjoyed fresh from the pan.
Tip: In Breton tradition, galettes are served with a glass of cold dry cidre (apple cider). For a clinical pairing, serve with a simple green salad dressed with apple cider vinegar to further support glycaemic control.
