How to Make It
- 1
Boil & Peel the Eggs
Place 5 eggs in a pot of cold water. Bring to a boil over medium-high heat, then reduce heat and simmer for exactly 7 minutes for a slightly soft, jammy centre, or 9 minutes for fully hard-boiled. Transfer immediately to an ice bath for 5 minutes to stop cooking. Peel carefully under cold running water and set aside.
Tip: The ice bath is essential — it prevents the grey ring around the yolk and makes peeling much easier. - 2
Prepare the Oat Crust
Place rolled oats in a dry blender or food processor and pulse 4–5 times to create a coarse, crumb-like texture — do not over-blend into flour. Transfer to a shallow bowl. Mix in smoked paprika and a pinch of black pepper. Set aside.
Tip: Coarsely blended oats give a crunchier, more satisfying crust than fine oat flour would. - 3
Season the Turkey Mince
In a large mixing bowl, combine the lean turkey mince with grated onion, minced garlic, grated ginger, ground crayfish, chopped uziza leaves, suya spice, Cameroon pepper, low-sodium soy sauce, black pepper, and sea salt. Mix thoroughly with clean hands for 2–3 minutes until all aromatics are evenly distributed and the mixture is slightly sticky and cohesive.
Tip: Grating the onion rather than chopping it ensures no large onion pieces interrupt the meat wrapping — and releases more moisture to bind the mixture naturally. - 4
Wrap the Eggs
Divide the seasoned turkey mince into 5 equal portions (approximately 90–100g each). Lightly dust each peeled boiled egg with whole wheat flour — this helps the meat adhere. Flatten one portion of mince on a damp palm or a sheet of cling film into a thin oval patty. Place a floured egg in the centre and carefully mould the meat evenly around the egg, sealing all gaps and pinching edges together firmly. Repeat for all 5 eggs.
Tip: Wet your hands slightly between each wrapping to prevent the mince from sticking to your palms and tearing. - 5
Coat with Egg Wash & Oat Crust
Beat the remaining 1 egg in a shallow bowl to create the egg wash. Roll each meat-wrapped egg through the egg wash until fully coated, then roll in the seasoned oat crumbs, pressing gently to ensure an even, well-adhered crust. Place on a baking tray lined with parchment paper. Lightly brush or spray each Scotch egg with olive oil or groundnut oil.
Tip: A double coating — egg wash then oat crumbs pressed firmly — ensures the crust stays intact and turns golden during baking. - 6
Bake to Golden Perfection
Preheat your oven to 200°C (390°F) or 180°C fan. Bake the Scotch eggs on the middle rack for 25–30 minutes, turning once at the 15-minute mark, until the oat crust is deep golden brown and the turkey mince is fully cooked through. For extra crispiness, switch to grill/broil mode for the final 3–4 minutes.
Tip: Use a meat thermometer if available — the internal temperature of the meat layer should reach at least 74°C (165°F) to confirm full doneness. - 7
Rest, Slice & Serve
Remove from the oven and allow to rest for 5 minutes before slicing. Cut each Scotch egg in half lengthways to reveal the beautifully layered meat and yolk. Serve warm alongside a fresh tomato and cucumber salad, spiced yoghurt dip, or a small bowl of pepper sauce (ata dindin). They can also be enjoyed cold from the fridge as a meal-prep snack.
Tip: These keep well in an airtight container in the refrigerator for up to 3 days. Reheat in the oven at 170°C for 8–10 minutes to restore crispiness — avoid microwaving as it softens the crust.
