Baked Nigerian Peppered Chicken Wings (Oven-Grilled Spicy Wings)

A healthier twist on the beloved Nigerian peppered chicken, these oven-grilled wings are marinated in a bold blend of suya spice, uziza leaves, and fresh tomato-pepper sauce — delivering all the smoky, fiery flavour of party small chop without the deep-fry guilt. Rich in lean protein and anti-inflammatory spices like ginger, garlic, and cameroon pepper, this dish supports muscle repair and metabolic health. Ideal as a high-protein snack or light dinner served alongside a fresh vegetable salad or roasted plantain.

How to Make It

  1. 1

    Prepare the Pepper Marinade

In a blender, combine the fresh tomatoes, tatashe, scotch bonnet, onion, garlic, and ginger. Blend until smooth. Pour the blended mixture into a wide saucepan and cook over medium heat for 10–12 minutes, stirring frequently, until the water evaporates and the sauce thickens slightly and darkens in colour. Remove from heat and allow to cool to room temperature.

Tip: Reducing the blended pepper before marinating prevents the wings from steaming in the oven instead of roasting — this is key to getting that charred, party-style finish.
  2. 2

    Marinate the Chicken Wings

Place the cleaned, skinless chicken wings in a large bowl. Add the cooled pepper sauce, suya spice, cameroon pepper, ground crayfish, low-sodium soy sauce, lemon juice, olive oil, half a seasoning cube, uziza leaves, and a small pinch of salt. Mix thoroughly until every wing is well coated. Cover with cling film and refrigerate for at least 1 hour — overnight is ideal for deeper flavour penetration.

Tip: Removing the skin significantly reduces saturated fat content while allowing the marinade to infuse directly into the meat.
  3. 3

    Preheat and Prepare for Baking

Preheat your oven to 200°C (400°F) or set your oven grill to high. Line a baking tray with aluminium foil and place a wire rack on top. Lightly brush the rack with a little oil to prevent sticking. Arrange the marinated wings in a single layer on the rack, ensuring they are not overlapping so heat circulates evenly.

Tip: Using a wire rack elevates the wings off the tray so hot air circulates underneath — mimicking the charcoal grill effect of suya spots.
  4. 4

    Bake the Wings

Bake in the preheated oven for 25 minutes. Remove the tray, flip each wing using tongs, and spoon or brush any remaining marinade over the tops. Return to the oven and bake for another 15–20 minutes until the wings are cooked through, slightly charred at the edges, and the internal temperature reaches 75°C (165°F).

Tip: For an authentic smoky finish in the last 5 minutes, switch to the grill/broil setting and watch closely to avoid burning.
  5. 5

    Rest and Serve

Remove the wings from the oven and allow to rest for 5 minutes before serving. Plate with fresh raw onion rings and cool cucumber slices to balance the heat. Serve immediately as a high-protein snack, or alongside a light vegetable salad or steamed brown rice for a complete dinner.

Tip: Pairing with raw cucumber and onion is a classic Nigerian street-food combination that also aids digestion and provides hydration from the vegetable water content.
