Baked Akara (Nigerian Bean Fritters, Oven-Style)

Akara is a beloved Yoruba breakfast staple, traditionally sold by roadside vendors in the early morning hours across Lagos, Ibadan, and beyond. These oven-baked bean fritters deliver the same fluffy, protein-rich interior and golden crust of the classic deep-fried version — without the excess saturated fat. Made from peeled black-eyed peas blended with crayfish, onions, and peppers, this heart-healthy adaptation is ideal for managing weight, blood sugar, and cardiovascular health without sacrificing authentic Nigerian flavour.

How to Make It

  1. 1

    Prepare and Peel the Beans

After soaking the black-eyed peas overnight in cold water, drain and rub them vigorously between your palms to loosen and remove the skins. Transfer to a large bowl of water and allow the skins to float to the top, then pour them off. Repeat until most skins are removed. This step is essential for a smooth, light batter.

Tip: Fully peeled beans give Akara its signature fluffy interior. Don't skip this step — the skins make the batter heavy and can cause digestive discomfort.
  2. 2

    Blend the Bean Batter

Place the peeled beans into a high-powered blender with half the chopped onion, the scotch bonnet pepper, tatashe, ground crayfish, uda seed (if using), and low-sodium salt. Add water a little at a time — no more than 60ml total — and blend on high until you achieve a very thick, smooth, and airy batter. The batter should hold its shape when scooped.

Tip: Less water means a firmer, fluffier fritter. If your batter is too loose, the Akara will spread flat and lose its shape during baking.
  3. 3

    Whip the Egg Whites

In a clean, dry bowl, whip the two egg whites using a hand whisk or electric mixer until soft peaks form. This traps air into the mixture, which will help the baked Akara rise and stay light without deep frying.

Tip: Ensure there is no yolk or grease in the bowl — even a small amount of fat will prevent the whites from whipping properly.
  4. 4

    Fold and Finish the Batter

Transfer the blended bean mixture into a large mixing bowl. Gently fold in the whipped egg whites using a spatula in slow, wide circular motions to preserve the air. Add the finely sliced spring onions and the remaining chopped red onion. Stir gently to combine without deflating the batter.

Tip: Folding — not stirring — is the key technique here. Vigorous mixing will knock out the air you have built up in the egg whites.
  5. 5

    Preheat Oven and Prepare Tray

Preheat your oven to 200°C (390°F) or 180°C fan. Lightly brush a non-stick muffin tin or a flat baking tray with olive oil or groundnut oil. If using a flat tray, use a large spoon or ice cream scoop to portion the batter into neat mounds, spacing them about 4cm apart.

Tip: A muffin tin gives the most consistent, rounded shape. Silicone muffin moulds work especially well and require minimal oil.
  6. 6

    Bake Until Golden

Lightly brush the tops of each fritter with a small amount of oil to encourage browning. Bake in the preheated oven for 20–25 minutes, flipping gently halfway through if on a flat tray, until the fritters are deep golden brown on the outside and cooked through in the centre. A toothpick inserted in the centre should come out clean.

Tip: Every oven is different. Check at 20 minutes — the fritters should be firm to the touch and pulling away slightly from the edges.
  7. 7

    Rest and Serve

Remove from the oven and allow to cool for 3–5 minutes before serving. Serve warm with Nigerian pepper sauce (ata dindin), fresh tomato stew, or alongside ogi (pap) for a complete traditional Nigerian breakfast. These fritters also pair well with sliced avocado for an extra heart-healthy boost.

Tip: Leftover Akara can be stored in an airtight container in the refrigerator for up to 3 days and reheated in the oven at 170°C for 8 minutes. They also freeze well for up to one month.
