Amala (Yam Flour Swallow)
The Yoruba swallow of choice. Made from dried, ground yam peel (elubo), amala is dark brown with a distinctly earthy note. The traditional pair for gbegiri and ewedu — the holy Yoruba trinity.

How to Make It
- 1
Bring water to a full rolling boil.
- 2
Pour elubo gradually into boiling water while stirring constantly. It will thicken quickly and turn deep dark brown.
Tip: Add gradually — tipping it all in creates unavoidable lumps. - 3
Cook over medium heat 4-5 minutes. Stir vigorously. Ready when it pulls cleanly away from the pot, smooth with no lumps.
- 4
Portion with wet spoon into balls. Serve immediately — amala hardens faster than pounded yam.
