Before you continue, this is just to let you know that Couscous doesn't deserve the semo slander...
Cook this meal and you will agree with my point of view. This very nutrient filled salad combines the rich aroma of sage and flavours from sunflower oil and dill seeds to give a flavour you won't be quick to forget.
Medium Sized Prawns (250g)
Scotch Bonnet Peppers x 2
Garlic (5 cloves) - Chopped
Red Onion (1 small onion) -1/2 chopped & 1/2 cut into half rings
Tomatoes x 3 (chopped into large cubes)
Heat pan up and add 2 tablespoons of sunflower oil to pan then add chopped onions and peppers.
Add prawns and then season with half teaspoon of ground sage - leave to cook for 3 mins before adding in 500mls of clean water.
Once broth boils, take prawns outs, turn off the burner and pour in couscous - leave in for 3-5 mins until couscous is soft and grainy.
Add, prawns, chopped kale, chopped tomatoes and dill seeds then stir in along with some drizzles of sunflower oil.
Add some ground sage and salt to taste.
